IP Chicken Casserole with Mac and Cheese and Candied Yams

Ingredients :

Chicken Casserole

3 Chicken Thighs

8 oz Corn Bread Stuffing Mix

1 10 oz Can of Cream of Celery

1 10 oz Can of Cream of Chicken

1 Small Onion (chopped)

1/ 2 Cup Chicken Broth

1/4 Stick Butter (melted)

1/2 tsp Salt

1/2 tsp Pepper

Mac and Cheese :

10 oz Macaroni Elbows

2 Eggs

1/3 Heavy Whipping cream

1 1/2 cups Grated Cheddar Cheese

Candied Yams

1 Large can Yams

1/2 cup Brown Sugar

1/4 Stick butter

1/4 tsp Salt

1 bag Large Marshmallows
























Directions :

Chicken Casserole

Place Chicken Thighs in pot and cover with water. Set Bone out Chicken and save broth for later.

Add all ingredients and mix well. Kinda like a good mud pie. Not to thin.

Add a little oil to the 2 ” pan. Place ingredients in pan and set aside.

Mac and Cheese :

OK,I cooked my Noddles on the stove top, but you can very well do them in the IP.

Placed a layer of cooked noddles in a 2″ oiled pan and cover with cheese. Repeat Twice.

Set aside the egg wash and wait until you are ready to stack them in the pot then add just before.

Candied Yams

Place all ingredients  in a bowl and toss a little.

Place ingredients into a 2″ pan and add a few marshmallows on top. They will melt but that makes it even better.

Add 1 1/2 cups water to the pot and stack the pans and place in pot .Cover the top one with foil.

Set Pot to manual for 10 min. and do a 15 min NPR

OK feel to eat just like this.

I prefer to brown mine a little.

Set oven to 350 degs. and place pans in a preheated oven for about 10 mins.

Don’t forget to add more marshmallows on the top.
