IP meatloaf, Mashed Potatoes and Squash Casserole.
Meatloaf
Ingredients:
2lb. lean ground beef
2 eggs (slighty beaten)
1 cup Chez-it crackers, crushed
1/4 cup chopped onion
1/3 cup milk
1/2 cup Heinz 57 sauce (plus a little more for top) 3/4 tsp salt
1/8 tsp black pepper
Directions:
In large bowl combine all ingredients and mix thouroughly. Place in IP safe dish and add 1 cup of water to the pot. Manual for 25 minutes and 10 minutes NPR. Add a little Heinz 57 to top. Cool meatloaf for 10 minutes and slice

Squash Casserole;
1 tbsp garlic minced
3 large yellow squash sliced, 1/4 inch thick
1 large onion diced
1 tbsp unsalted butter
1 tbsp olive oil
2 eggs beaten
1/2 cup mayonaisse
1/2 cup milk
1 cup Colby Jack Cheese shredded
1 cup Mozzarella Cheese shredded
1/4 cup Parmesan Cheese shredded
Salt and Pepper to taste
3/4 cup Panko breadcrumbs
1/4 cup Parmesan Cheese shredd
Slice the yellow summer squash into roughly 1/4-inch slices, dice the onion. Preheat a medium pan. Add 1 tablespoon of butter and 1 tablespoon olive oil to the pan. Add the yellow squash, onions, and garlic salt and pepper to taste. Cook about 5 to 7 minutes until slightly softened but still firm. Remove to a colander to drain excess liquid from squash mixture. Parmesan cheese. Top the squash casserole evenly with the topping.
Combine the panko readcrumbs, and additional Parmesan cheese. Top the squash casserole evenly with the topping after you remove from the IP. Then place back in IP and air crisp for 5 minutes to brown. You can also brown in a preheated 400-degree oven for thirty fee minutes until top is browned. Parmesan cheese. Top the squash casserole evenly with the topping and place back in the IP and set air crisp lid at 375 for 5 minutes or you can place in the oven.Serve immediately. May be stored for up to one week in an airtight container.
IP Mashed Potatoes
INGREDIENTS:
3 lb Potatos, cut up in Qurthers
Kosher salt and freshly ground black pepper, to tastr
1/4 cup whole milk
1/2 cup sour cream
6 tablespoons unsalted butter, cubed
2 tablespoons chopped fresh chives.
Pressure Cook for 20 minutes on high pressure and 10 NPR.
Combine all ingredients and mix well. I used a hand mixer.
Place all the food in separate 2" x 7" pans and stack in a 8 qt. IP or you can do 2 in a 6 qt.
Add 1 1/2 cups water to the pot. Set pot on Manual or Pressure Cook for 20 minutes and 10 minute NPR.
Remove the potatoes and place the Meatloaf and Squash Casserole back in pot and place air fryer lid and brown for 5 minutes.
