Brunswick Stew


1. 3 lb. Pork

2. 2 lb. Beef

3. 3 lb Chicken Leg Quarters 

4. 1 med. Onion 

5. 1 1/2 lbs. potatoes

6. 1 8 oz. tomatoes

7. 1 8 oz. Corn

8. 4 oz. Hot bbq. sauce

9. 2 Tbsp Brown Sugar

10. 1 Small Can Tomato Sauce

11. 2 Tbsp Black Pepper

12. 8 oz. Tomato Juice

13. 1/4 tsp. Red Pepper ( Hot )

14. 1 tsp. Lemon Juice

15. 1/2 Stick Butter

16. 2 tsp. Vinegar

17. Salt and Pepper to Taste


Place chicken in pot. add 4 cups water to the pot. 

Set pot on manual for 10 mins. and do a 15 min. NPR.

Cook Chicken the day before and bone out. Save broth and store in Fridge over night and remove all the fat the next morning and discard.

Put Broth in the pot and set to saute, add potatoes and onions  (Chopped) and cook until soft.

Grind Chicken ,tomatoes and corn with a fine blade and add to pot.

Add Ingredients 8 Thur 15 . 

Continue to heat on saute until hot now remove from pot in a bowl and set aside.

Pork and beef are to be cooked separately in the pressure cooker. 

Place pork in pot and cover with water and cook for 15 min. and do a 15 min. NPR . bone out pork and discard broth.

Place Beef in pot and cover with water and set pot to 10 min and do a 15 min NPR. save beef broth. 

Now grind beef and pork with large blade.

Now place all ingredients in pot and set to saute again once it comes to a boil add vinegar and butter and stir in well .

If stew seems to thick add some water. Be careful not to fill past line.

Set pot on manual at low pressure for 15 mins. and do a full NPR .

I know this seems like alot of work but it's well worth it.

Also if you have more than one pot it makes things alot easier.
