What do you think of when you think of summer? I think of warm sun,I think of dancing in the rain, and fresh fruit and vegetables. maybe it's the vibrant colors I adore, the sweet smell of each fruit and vegetables as the main fare. 

 

 

 

 

Ingredients:

  • 2- Boneless Chicken Breast
  • 2- Medium Squash 
  • 2- Medium Zucchini
  • 2- Ears Corn
  • 5- Cherry Tomato's
  • 3/4 Cup Brown Rice ( 3/4 Chicken Broth )
  • 1- Cup Chicken Broth ( Chicken And veggies)
  • 1- Cup water ( Rice )
  • 2- Tbsp Butter Olive Oil
  • 3- Tbsp Blood Orange Olive Oil
  • 1- Tbsp Maple Balsamic Vinegar  

Directions:

Place veggies in a bowl and add 1 Tbsp Butter Olive Oil, Salt and Pepper also do the same to the Chicken. Place Chicken and Veggies on The Rack and add 1 Cup of Chicken Broth to the Pot and set on Manual ( Pressure ) for 2 minutes and do a QR. Remove the Chicken and set the Pot to Saute on normal, add the Blood Orange oil and Vinegar and Brown both sides.

Brown rice, I use a Pot in Pot method. Add 1 cup Water to the pot. Place Rice with the Broth in the Pot and set to Rice it will run in auto. I done a NPR.
